You can get the most delicious fish cakes out of fresh fish. You can even use
frozen fish, but make sure you keep all the water that runs off it when
defrosting. Make sure you use a fish that will bind, like fresh perch. Try this
recipe out:
• 500g fresh perch
• 1 tbsp salt
• 1/2 chop. onion
• 1 tsp pepper
• 1 tsp nutmeg
• 1/4 cup potato fl.
• 2 eggs
• 1/2 cup cream
• 1/2 cup milk

Mix the fish and salt in a mixmaster on full speed until smooth. Mix in onion
and spices, then the eggs. Pour in half the milk - mix and pour in the potato
flour. Mix well with the rest of the milk and the cream. Fry on medium heat in
butter.
